Cinnamon Bread/ Rolls Using Breadmaker and Airfryer


After attending the Panasonic cooking demonstration in December 2015, I had been wanting to share the recipes. Nevertheless, I had been pretty tied up with other activities and would only share recipes that I have worked out (and know are really good/ easy enough). 

Cinnamon rolls are the husband's grandama's favourite, so of course this was the first I tried out! This dish was originally meant to be a cinnamon loaf and demonstrated using only the breadmaker for the entire process. 

Nonetheless, I love how cinnamon rolls can be like pull-apart buns where you can just pinch what you like and each piece is perfect and bite-sized. As this effect can only be created using the oven/ airfryer, I have adapted the original recipe a little into 2 versions: (1) Loaf version using breadmaker; and (2) Pull-Apart Buns using the airfryer.

Cinnamon Bread/ Rolls
Yield: 1 loaf (for breadmaker)/ 2 six-inch trays (for airfryer)

Ingredients
(A) Bread
200g bread flour
20g butter
2 tbsp caster sugar
1 tbsp milk powder
1 tbsp salt
½ egg (27g, beaten)
110ml cold milk
1¼ tsp instant yeast

(B) Cinnamon mixture
20g cinnamon sugar (10g sugar and 10g cinnamon powder)
80g semi sweet chocolate chips
3 tbsp milk
3 banana (300g - sliced) - optional


Directions
1. Add ingredients (A) into the breadmaker.

2. Select manual dough mode in your breadmaker and let the breadmaker do the kneading.
(If using Panasonic breadmaker, time taken for this step is 55 min.)


3. When ready, remove the dough from the machine and place it on a flat surface, e.g. a household chopping board. Lightly dust the surface and rolling pin with flour.

4. Roll the dough out to fit the full size of the chopping board (approximately 22x32cm). 


5. Coat the dough with a layer of milk and sprinkle with cinnamon, sugar, sliced banana and chocolate chips. 


6. Roll up the dough. Remove excess flour from the dough.


If baking as a loaf in breadmaker,

7. Cut into 4 even-sized pieces.

8. Remove the kneading blade from the bread maker, place the 4 pieces of cut dough back into the bread pan, and press Start. Dough will rise in the bread pan, before it starts to bake. 
(If using Panasonic breadmaker, time taken for this step is 1 hr 20 mins.)

9. When ready, overturn the bread pan and remove the loaf from the baking tray. You are ready to serve!



If baking as rolls in airfryer,

7. Preheat airfryer at 80 degrees for 5 min. 

8. Cut into small bite-sized pieces. Arrange the rolls neatly in the baking tray. Ensure that there are spaces in between the rolls.
Before (sorry for the messy work!)

9. Rest the rolls in the warm airfryer for about 45 to 60 min. The rolls will expand and fill up the whole tray.
After - Notice the difference in size!

10. When ready, bake at 160 degrees for 4 min until golden brown. 

11. Overturn and remove the rolls from the baking tray. You are ready to serve!
