Earl Grey Tea Raisin Scones Using Airfryer


 

One day, my college friend and I were commenting about how nice it would be to have a baking session together. Last weekend, this finally became a reality.

We made earl grey tea scones with raisins together and they turned out really lovely. I liked the special earl grey aroma and the scones were not overly sweet. An important part of scones-making is the high temperature required, so having an airfryer that could go up to 200 degrees really helped. 

Importantly, we had a really happy girly-time together catching up  - I am so glad we had a chance to do this together. Cheers to our many years of friendship! Recipe
Yield: 16 scones

Ingredients
350g plain or cake flour 
2.5 tsp baking powder
40g sugar (feel free to add more sugar if you like them sweeter)
a pinch of salt
110g butter
115ml milk
1 earl grey tea bag
1 large egg

Directions
1. Sieve the flour, baking powder, sugar and salt into a mixing bowl.

2. Add the butter.

3. Rub the butter into the flour mixture until it resembles coarse crumbs.

Tip #1: Use the tip of your fingers so that less of your body heat is transferred to the batter.
Tip #2: I like using plastic gloves (or reversed plastic bags) for that effect too, and cleanliness.
 
4. Make a well in the centre and put the flour mixture into the fridge.
Tip: Always try to keep the batter as cold as possible. Scones turn out better this way!
 

5. Meanwhile, in another bowl, pour the milk and add the earl grey tea bag. Heat them in the airfryer at 120 degrees for 8 min. 

6. Leave the earl grey tea in the bowl. Set aside for about 15 min to let the tea be infused into the milk. Press the tea bag occasionally with the back of a spoon, so that the tea can be better released.

Soon, you will notice that the milk has turned brown. Of course you can also smell the fresh aroma of the earl grey tea. Lovely!

7. Put the egg into the tea-infused milk, and whisk.
  
8. You can now remove the cold flour mixture from the fridge. Add the milk & egg mixture and raisins into the flour mixture. Mix together until the dry and wet ingredients are just combined.
Tip: Do not overmix, as this may result in tough scones!

9. Preheat airfryer at 200 degrees for 5 min.

10. Roll the dough into round shapes and lay them on baking paper. Use a cookie cutter if you can, so that you can get sharp clean edges. Brush with some milk.

Tip: Brush the milk lightly and evenly, so that the top of the scones can become consistently light brown after baking.

11. Bake the scones in the airfryer for 200 degrees for 4 min. Thereafter, continue baking at 160 degrees for another 6 min till they turn golden brown. Insert a toothpick to check that they come out clean.
 

They are now ready! Serve them warm and with jam - super yummy! :)
