Mangoes are my favourite fruits and I have a weakness for their silky smooth delicious creamy taste.
During the mango season in Ghana one could buy about 3kg of sun ripened mangoes for less than £1, sit under a tree and eat till their hearts content.
On a sunny day (which was almost everyday in Ghana) keeping the Mangoes in the fridge was the best alternative to ice cream, to enjoy after dinner.
Luckily my local grocer stocks the best sun ripened, juicy and perfumed sweet Mangoes (as a self appointed Mango connoisseur), hence I'm able to satisfy my cravings.
A friend suggested I made Mango Lassi, when she saw the stock of Mangoes I had. A kind old Indian lady I met at the grocers suggested this recipe and I'm happy to share.
This recipe can be frozen to make frozen yoghurt, particularly for your children or enjoy as a cold drink.
Ingredients;
1 peeled and diced large sun ripened Mango
150g of natural yoghurt
1/4 teaspoon of ground cardamom
Method;
Add all the ingredients to a blender
Blend everything together and pour into your preferred jar or glass.
Refrigerate for at least an hour and enjoy chilled.
