I found a big pack of 3-in-1 instant milk tea sachets at home and they became part of my latest muffins/ cuppies (cupcakes).
I really loved how moist they turned out, so below is the recipe. They are quick to bake and perfect for last minute parties. The brand of milk tea that I used is quite mild, so it is suitable for children as well!

Milk Tea Muffins/ Cupcakes With Walnuts Using Airfryer
Yields 7 muffins
Ingredients
35g (2 sachets) 3-in-1 instant milk tea powder
70g fresh milk
(B)
1 egg
40g sugar (reduced from 60g)
55g olive oil
1/2 tsp vanilla extract
(C)
75g top flour/ cake flour
1 tsp baking powder
50g walnuts (optional)
Directions
1) Heat the milk in airfryer at 120 degrees for 5 min.2) Add the milk tea powder into milk and stir until well-combined. Set aside. This is (A).
3) In another bowl, add the sugar into the egg and whisk until fluffy.
4) To the egg mix, add oil and vanilla extract. Combine well. This is (B).
5) In another bigger mixing bowl, add the sifted flour and baking powder. Mix well.
6) Add the walnuts as well. This is (C).
7) Make a hole in (C). Add the wet ingredients of (A) and (B) into dry ingredients (C). Fold the mixture gently till just combined. Do not overmix.
8) Preheat airfryer at 150 degrees for 5 min.
9) Using a small spoon, fill the muffin cups until they are 70% full.
10) Bake in airfryer at 140 degrees for 9 min. Insert a toothpick into the muffins to check if they come out clean. If not, continue baking for another 3 min. Enjoy!
PS: The airfryer uses fast-circulating hot air to "blow" and bake our food. So if your muffins come out in funny shapes, that's perfectly alright! :)
You can also eat the muffins warm with some hot Chinese tea - if you love stronger tea taste!
