Chorizo and Prawn fried rice.

Ingredients 
Serves 6
300g of long grain or Basmati rice
150g of peeled and chopped chorizo 
250g of peeled Prawns
1 tablespoon of virgin coconut oil
2 finely diced shallots
1.2kg of Cod fillets divided into 6 equal portions 
250g of brocolli stalks
450ml of chicken or vegetable stock



Method;
Wash your rice under cold running water using a colander for about 2 minutes. 
Add the coconut oil to a saucepan and place on a medium heat for 2 minutes. 
Add your diced chorizo to the oil and fry for 3 minutes.
Then add your chopped shallots and fry for further 2 minutes.
Add your diced garlic and fry for a minute. 
At this stage the oils from the chorizo will be released into the coconut oil. 
Add your washed rice to the chorizo mix and stir for about 2 minutes. 
Make sure the rice is well coated into the chorizo mix.
Warm your preferred stock and gently add it to the rice. 
The rice will sizzle and the stock will be boiling at this point. 
Cover the saucepan with it's lid and lower the heat. 
Cook the rice gently for 18-25 minutes. 
Using a fork, lift the rice gently to check for evenly cooked fluffy rice and taste for softness. 
At this stage add the uncooked peeled prawns to the rice. Leave to cook for 2 minutes and turn the heat off.
