Banana Walnut Cake Using Airfryer


It's a tradition for my family to buy a cake for Chinese New Year, as the 糕(gao) in 蛋糕 sounds like 步步高 (gao) 升 which means improving step-by-step.

A butter cake from Prima Deli would easily cost $20 and is usually quite oily, so I decided to bake one myself this year. I was still starting out, but the thing about family is that whatever you make, they will always be your best supporters :)

After a few trials, I find that I prefer using oil to butter for making cakes due to the consistency. It's much faster too. This original recipe was from my HK auntie, but when I used it in the air fryer, the cake became burnt. Eventually, I used the aluminium foil way, all thanks to a Facebook member, Christine Wang's, advice and it turned out perfect. Enjoy the adapted recipe!

Recipe

Yield: One 6" cake

Ingredients
(A)
2 eggs
1/2 cup cooking oil
1/2 tsp vanilla extract (or 1 tsp vanilla essence)
1/2 cup sugar

(B)
1.5 cups top flour/ cake flour (or any low-gluten flour)
1 tsp salt
1 tsp baking soda

(C)
3 medium bananas
1/2 cup of chopped raisins and walnuts

Directions
1. Preheat airfryer at 160 degrees for 5 minutes. Grease 6" cake pan.

2. Whisk eggs for about 3 min.

3. Mix ingredients in (A) together and set aside.

3. In another bowl, combine ingredients in (B) together and sieve. These are the dry ingredients.

4. In another bowl, mash the bananas with the back of your fork. 

Tip: You may add a tsp of lemon to the bananas to prevent them from browning. Read more here.

5. Combine the bananas with (A) to form the wet ingredients.

6. Add the wet ingredients into the dry ingredients. Fold in gently. Mix lightly and pour into a 6 inch baking pan.

Tip: Overmixing the cake batter will produce tough cakes due to the gluten. Hence, I also would recommend low protein flours like cake flour or top flour.

7. Lastly, decorate the top with walnuts and raisins. 


8. Cover the cake pan with aluminium foil. Bake in airfryer at 150 degrees for 30 minutes.


9. Remove the aluminium foil. Bake in airfryer at 140 degrees for another 5 - 10 minutes. Test its doneness using a toothpick. If it's ready, the toothpick should come out clean.


 10. The cake is now ready to be served. Enjoy!


My parents loved the cake, especially all the nuts :)

This banana cake recipe seems to be my most popular recipe to date. Joni Lian from Singapore replaced the raisins with chocolate chips to suit her children's preference and they loved it!
